Kevin Martoken enjoys many hobbies when he is not working as a fund accountant. Cooking Italian cuisine is one of Kevin Martoken’s favorite pastimes.
One of the more refined Italian dishes is risotto, a traditional dish and comfort food cooked in restaurants all over the world.
Risotto is most often made using short-grain rice, such as Arborio. This rice is selected because it absorbs more liquid, becoming creamy. When preparing risotto, add the liquid in gradually with the rice. Then, cover the pot and leave it to cook. Stir frequently while cooking.
For a popular variety to risotto, add tomato and basil. Cut Roma tomatoes into little pieces. Next, gather about a cup’s worth of fresh basil. Then, heat two tablespoons of olive oil in a skillet on medium-high. Add the tomatoes and spices to the hot pan. Cook, constantly stirring, for only a few minutes. Stir in with the risotto, and top this excellent dish with grated parmesan.
